Recipe - Best Ever Banana Bread

Believe it or not, I got this recipe from our IT guy at work. He brings this bread in regularly, and the first time, he tried to convince us that he baked it himself. As it turns out, his lovely wife bakes it for us.

It's a nice moist bread that is made even better by the crunchy nut and sugar topping. I get an organic fruit and veggie box every two weeks, which often results in more bananas than I know that to do with. Freezing the bananas and then thawing them just before baking makes them the perfect consistency for banana bread.

BEST EVER BANANA BREAD

INGREDIENTS

• ½ c. oil
• 1 ½ c. sugar
• 2 eggs
• 2 mashed bananas
• 2 c. flour
• 1 tsp. baking powder
• 1 tsp. baking soda
• ½ tsp. salt
• ½ c. sour cream
• 1/4c. milk
• 1 tsp. vanilla

TOPPING
• 1 tsp. cinnamon
• 4 tsp. coconut
• 4 tsp.chopped walnuts
• 4 TBLSP. White sugar
• 4 TBLSP. Brown sugar

STEPS
1. Mix together first 4 ingrediants
2. Mix together dry ingrediants
3. Add vanilla to wet ingrediants
4. Alternate adding milk and sour cream with dry ingrediants to wet ingrediants.
5. Sprinkle ½ topping in the bottom of two small loaf pans and pour in batter.
6. Sprinkle remaining topping over batter.
7. Bake in a preheated oven at 350 degrees F. for 50-60 min.
